And I thought I was so Special Because I Could Double Dutch!

I know how hard it was to learn how to double dutch way back when in the streets of Brooklyn (can you imagine ME jumping rope today - never mind double dutching!). I also love the Cadette reactions - awesome!

St. Barnabas the Apostle Church

I love this church! Not only for it's structural & majestic beauty, but for the love & friendship I have found here. I was married in this church, my son was baptized, received his first communion & in three weeks will be confirmed there. The church is beautifully decorated under the guidance of Father Peter - the first picture is on Ash Wednesday & the last three is how it appeared Holy Week. (pics courtesy of Tracey Clifford)

My Quest for Meatless Meals

I am trying to serve at least three meatless meals per week - not only to economize, but to try & eat healthier in general. I found THE greatest waffle mix - yes I said waffle mix - for dinner!!! It is Carbon's Golden Waffle Mix awesome - simply awesome. I purchased a case of this from Amazon's Subscribe & Save which I highly recommend (15% off & free shipping & the ability to control the shipments).

Anyway - I made them for dinner last night - served my DF & DB theirs topped with blueberry yogurt & dried cranberries, me & DS had them with heated syrup & butter - all with a sprinkle of powered sugar. They were unbelievably good - good enough to rotate them into my regular menu - perhaps with different toppings & even as a dessert.

Clumps of Crocus' greet me each morning.
